Coconut Rice

Coconut rice is a popular south Indian rice dish. It is extremely easy to make and very light on the stomach. Made with fresh and tender coconut, this dish has a very subtle yet distinct flavor. Apart from the taste, coconuts are also a useful source of iron and fiber!

Serves: 2

Preparation : 15min

Cooking time: 30 minutes

Ingredients:

1 cup rice

1 cucumber finely chopped

1 onion finely chopped
1 tbsp cashew bits
3 green chillies slit
1 stalk curry leaves
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp urad dal
2 tbsp grated fresh coconut
1 tbsp coriander chopped
2 tbsp oil
salt to taste
lemon to taste

Wash the rice. Cook the rice. Heat oil in a heavy saucepan and add urad dal, mustard and cumin seeds, cashews, stir till the mustard seeds start spluttering. Add chillies and curry leaves. Add the grated coconut and Stir for two minutes. Take the coconut mixture and add it to the rice. Mic gently and garnish with coriander before serving.
